My family of 5 would like to tour around a little the first part of our week in STT. I see there is a safari tour, but can anyone recommend anything? Do taxi drivers do this?

I think the term "safari" just refers to the kind of vehicle you will ride in - an open-air vehicle that reminds me of the parking lot tram car at Disney (single section, not the whole tram thing)- but painted in much more vibrant island colors. Yes, the driver is a taxi driver because the "safari" is a taxi. These are the sort of taxis that are used on the islands. It is a good way to tour the island.

I toured with Godfrey when I visited STT from a cruise ship. I found it to be a great value and and good way to see a lot of the island. If you can check the cruise schedule for when you plan to be there and do it on a non cruise day I'm sure he would accommodate your group.
