I was in Jamaica months back...

Can I go cliff diving anywhere around here? That was fun...

Horseback riding?

Can I buy coconuts anywhere, have them cut and drink it?

Any unique snorkeling (currently at sapphire beach)?

Anything extreme (skydiving, bunjee, shark diving, etc)?

You can ride horses on STX. Sometimes you will find a stand selling coconuts that the proprietors will open for you with a machete. What you see snorkeling is mostly a matter of luck, though STJ's Trunk Bay is uncommon in that the underwater trail is marked. There is no cliff diving, skydiving, bungee jumping, zip lining, etc. here.

There is a rock climbing excursion, http://www.usvirockclimbing.com/, but I think they are closed until mid or late September.

There isn't horseback riding on St. Thomas but you can head over to St. John and do it there at Carolina Corral.

There is usually a man selling coconuts from the back of his truck at the corner by Fort Mylner Shopping Center, close to the entrance to Pricesmart.

As far as easily accessible from the beach snorkeling... Sapphire is good, so is Secret Harbor, Coki, Cowpet, Hull Bay.

None of the extreme activities you mentioned... but there are other activities... scuba diving, sailing charter, head over to St. John for the day, you can rent a dinghy in Cruz Bay and beach hop that way, kayaking, para-sailing, kite boarding... You can also get Coconuts at Magens, earlier in the day, not afternoon. Rasta dude right outside the gate.

They have 2 fruit stands in Smith Bay by Coki Road that also has a machette weilding coconut lady.
