I would like to order sushi for 35 for a prewedding event in STT. Was wondering if Sandie Hansen (who used to own Hatsumama) is still around - she used to also make sushi for the Westin and Caneel and was very talented. If I can't find her, I wonder if the 2 STT sushi places have good stuff, or if I should figure on doing something other than sushi.

Would also like to know where one buys a large quantity of fresh salmon or other fish. Is there a wholesale fish monger? When we were at Hatsumama a few years ago, Sandie said she ordered all her fish from Miami to assure quality.

Beni Iguanas is, IMHO, the best sushi on STT. Todd does a wonderful job! Sushi by Sato is advertising in the Island Trader for special events. That might be another good option, since he closed his restaurant.

Believe it or not, I have two chefs that have worked with Sandie and two others who are very good at rolling sushi. If you are interested in some specialized sushi, give me a call. I ONLY use the best and freshest fish from florida or local. We got in some beautiful hawaiian tuna last week and the wild king salmon is running in Alaska now. Just email me if you want to work something out!

Hi, it's Sandie herself. After the restaurant closed I moved to San Diego and am helping to open a new restaurant in La Jolla. You want great sushi? Contact Chris Mathieu at Simple Feast or Wed. night at the Tamarind. I trained him for about a year and he is amazing! Also, for fresh fish I used local fish perveyors. You deffinately don't need to go to STT.

Chris works at Chloe and Bernards now and is still doing the tamarind on Wednesdays. I've already mentioned the post to him!
