Unfortunately, due to work schedules, the trip we were hoping to take in April/May to St. Johns will have to be put off until June.
This is pretty 'off-season'. We were planning on staying around Coral Bay.
Will restaurants and shops still be open or are we likely to run into a lot of businesses closed for the off-season?

June isn't really considered "off season". Any closings are generally between late August - mid October so you'll be fine. Note, no "s" on St John!
June is normally the time we travel to STJ. Beaches are all yours. Seriously, if there are more than 4 people, go to the next one. Nothing is closed and parking is easy.
Things don't really drop off for us until after Carnival (July 4th). No worries! Everything should still be open. I can't recall a single business that closes for any amount of time until August.

June is the best time to visit the VI! The first weeks of June is best (before state-side schools close for summer vacation) is even better. Less crowds. Better rates. Better service. Pre summer storms. Lucky you--picking the best month by default. Have fun.

in early june the weather is still temperate enough, and i think that's a great time to visit.
no "s" in st. john (st. john's is in antigua)... i know it sounds nitpicky, but ... 😉
once on a saturday our st. john guests called to ask if i could help them, they were expecting the rest of their party at the dock as they were on a private charter and they had not yet arrived. minutes turned to hours and they called back to say that the friends had told their captain they wanted to go to "st. johns" and he took them to antigua. they did not know the islands they were seeing, so had no way to know they were going in the wrong direction. true story. so they missed a night at the villa and hopefully had a few laughs.
