Emmy.
There are not too many day sails to St. Croix. You may be able to arrange one with one of the smaller boats but don't really think so. I could point you towards a couple of power boats that might be interested.
Snorkel equipment is easily rented although if you have special mask requirements it is best to bring your own i.e., special lenses, child sizes, etc. Snorkels are available for rent but I don't like the idea of putting someone else's in my mouth too much. Forget bringing fins, etc.
Someone else will have better info on food, etc.
Enjoy your stay and email me if you need help with the power boat.

St. Croix
If you find one, it will take all day and leave little time for casino or snorkeling. If you really want to visit St. Croix (save it for next trip), the seaplane is better option.
Snorkeling
If you are planning on snorleling all week, it is better to buy and bring it with you. We paid ~$60 for mask, snorkel and fins at home and the rental was no cheaper for a week. Got to choose our own needs and no foreign material in our mouths. If you only plan on 1-2 days you are better off renting. The day sails around St. Kohn are numerous and worth it for snorkeling. We used Wayward Sailor (www.waywardsailor.net) out of Cruz Bay and Captain Phil was excellent. He took us to Lovongo (?) Island just north of St. John. We found it more convenient to use 'local' sail rather than out of St. Thomas. St. Thomas sails come to St. John anyway and you have to get to Red Hook early and arrange return. We paid $85 pp includes lunch and drinks. 10 AM - 4 PM.
I am not familiar with Johnson Bay location, but Windspree has mostly Coral Bay area properties. Immediate area snorkeling is limited to Salt Pond Bay and the Lamshure Bays, all three are good.
Food
We brought frozen steak, chicken and shrimp in a soft sided cooler with dry ice. Milk, eggs and other produce is available at higher but not outrageous prices considering you're on an island. If you have special likes (our kids wanted cereals) you might want to consider bringing that also. Groceries in Coral Bay area are more limited than Cruz so you might want to consider stocking up in Cruz and topping off in Coral.
No-see-ums
Only a problem on the beaches when air is still and/or dusk/evening. Use DEET product and you should be fine.

Have fun...we did.
