When we were in St Thomas and took a day trip to the British Virgin Islands we saw a palm tree with red berries. What are these called?

I believe you're describing a Christmas palm.

Sounds like it, named thus because the red berries appear around Christmas time. Proper name, Veitchia merrilli. They're all over the tropics (lots on STT too!)
