I am hoping to visit next summer at the very beginning of the off season...taking
advantage of fewer people and lower prices?? When would the ideal time be?

Usually the prices shift in May, and that is often a good time, before summer vacations and June brides. Nothing wrong with June, though- very romantic! July has great weather and usually good beach weather, as well as St John Festival. Now, people will tell you to watch out fror August and September because it is hurricane season, but ha, ha! The "bad weather" this year was in November! So, I'd say, if you can get a deal at a time you can travel- take a chance!
