Anybody have one? Am looking for the authentic caribbean recipe for fresh ham.
For those also looking, I got this recipe from one of the contributors to this forum who, it seems, hasn't been able to post lately for some reason.
Caribbean-Style Barbecued Ham

Cook Time: 1.5 hours
Ingredients
- 1 CURE 81® Half Ham
- 1/2 cup amaretto or other almond flavored liqueur
- 1/2 cup water
- 1/4 cup packed brown sugar
- 3 tablespoons shredded fresh ginger divided
- 1 tablespoon black pepper
- 1/4 cup HOUSE OF TSANG® teriyaki marinade
- 2 tablespoons lime juice
- 2 tablespoons tomato paste
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
Directions
Heat oven to 325°. Place ham in shallow baking pan. Pour amaretto and water into pan. Cover. Bake 45 minutes. Pour drippings into small saucepan. In small bowl, combine brown sugar, 1 tablespoon ginger, and black pepper. Sprinkle mixture over ham and press with back of wooden spoon to adhere. Bake, uncovered, 30 minutes longer. Add remaining 2 tablespoons ginger to drippings. Boil 5 minutes or until reduced to 1/4 cup. Stir in remaining ingredients. Bring to a boil. Remove from heat. Serve with ham.
