I don't have any pics, but things like oxtail, bullfoot, fungi, callaloo, saltfish, curried mutton (goat,not sheep), etc. Maybe Google Cuzzin's on STT and see if they have anything?

Anyone else?

how bout johnny cake, kingfish,assorted pate' and plantan(sp)? and the local beverages, ginger beer,tamarand etc?

OK.... Local fish, fried, broiled, boiled, baked,stewed. Goat & chicken prepared by centuries old receipes. Fungi a starch staple made with cornmeal with or okra. Red peas and rice, pigeon peas and rice, mac and chese, island style, meat / saltfish / conch /lobster /shellfish / Pate's. Pate's are the previous meats rolled in dough and deep fried. The dough fried by itself is call a johnny cake usually served with fried fish or fried chicken legs. There are also Lobster, conch, whelks dishes. My favorite is conch in butter sauce with caribbean boiled sweet potatoe. Plantains (a big Banana type fruit) is served both fried and boiled. There is roast pork Puerto Rican style. Souse, which is pig feet or pork loin in a limebased sauce served with potato salad.There is a dish called potato stuffing that is made like mashed potatoes but with raisens, minced onions, diced celery added in a tomato sauce which is mixed into the potatoes. Some people add sugar, some add hot peppers.

Drinks are made from various fruits, such as Tamarind, soursop, passion fruit. There is also ginger beer which isnon alcoholic and maubi,a drink made from the bark of a tree.

There are coconut, guava, guavaberry and pineapple tarts. (they look like pies) Fruit cakes and sweetbread should be sampled.

I have left outother local stuff Iam sure but if you are here for Carnival, make sure you attend the foodfair. There you will find many opportunities to sample local disheslike kallaloo, bullfoot soup etc. Don't be afraid to ask or try, it won'tkill you.

Also be advised, you can eat something from one individualandstep next door at the food fair and geta different taste of the same dish. Such is Caribbean Cuisine.
