We just returned from four nights and five days at wonderful Secret Harbour! Had a problem with an air conditioner in our first room (Ocean front studio, #801) and the staff were great about immediately moving us a few doors down to #804 - this room is directly next to the Aqua Dive Shop live cam so go there if you want to see our view - just fantastic! I'll be happy to answer any questions about the resort if you're going there soon or are considering a visit - we recommend it highly! Blue Moon restaurant was great too (although I do wish they'd open for breakfast just a bit earlier than 8 a.m. for people who want to get an early ferry over to St. John). Now the question. We had dinner one night at Mim's - great meal! - and we both LOVED her drink "Lime in the Coconut." We have been unable to find a recipe for it on on-line and we're hoping someone here knows it, specifically how its made at Mim's if possible. thanks!

We are considering spending a day at Secret Harbour while in port . How was the snorkeling at SH? Did you visit Saphire Beach by chance to snorkel? If so, can you compare your experiences. These are the two beaches we are considering spending our day. We appreciate your help. We plan to eat at the Blue Moon(outside area) if we end up at SH. Food choices were good? We have two boys ages 11 and 15. So we want to spend a day snorkeling, and just relaxing in the sun! We welcome any suggetions you can offer. Thanks in advance!
We are pretty hardcore snorkelers and have done it at both places. Unfortunately, the day we were at Sapphire (not on this trip -they just had a fire there by the way...) it was quite choppy and windy so it would be an unfair comparison. The snorkeling at SH is excellent - we saw the usual wide variety of reef fish plus a couple turtles, an octopus, a small moray, cuttlefish and even a large ray - very cool! The water is relatively shallow so no worries about beginners. The bay at SH is protected from winds that can blow out the snorkeling at the north side beaches on St. John and also Coki and Sapphire. Also - there is only a small snack cart for food and drink at Sapphire. Your boys will be happy with the lunch menu at Blue Moon but be prepared to pay $15 - $20 with tip for a burger and fries plus more if you include a drink. The food is good though and if you like fish, the grilled mahi sandwich is the BEST I've ever had, and I'm a total fresh fish snob (hence my screen name!). I think your best bet is SH rather than Sapphire, but hey, they're both great!

1.5 oz Coconut Rum
(light or dark rum can be substituted)
2 oz Rose's Lime Juice
1 oz Coco Lopez
1/2 slice of lime
Splash of Sprite (optional)
Slice of Lime Garnish
Put all ingredients in a blender. Add 1 glass of ice. Blend till smooth. You can add a dash of Sprite or simple syrup to sweeten and/or to make blending easier if it is too thick. We get the most compliments on the Lime and Coconuts that we make with Sprite, and the lime in the blender is very important.

We too ate at Mim's and we really did enjoy it! (see my STT Wedding/Trip Report posted on 7/26/09) I had never seen it recommended on here, since I have been on this site, so I am happy to hear that someone else enjoyed it as well. Our hotel had recommended and it was a pleasant surprise. The ocean hittling against the rocks was just heavenly while we enjoyed our food, drinks and great company! Can't wait to go back again!

Thank you Capefisherman-since you sound like you enjoy snorkeling as much as we do, we'll trust your opinions-sounds like we'll go to Secret Harbour-sounds perfect-everything we need will be there and as you said the waters should be calm and perfect for snorkeling with it being shallow. Thanks so much-I'll be trying that Mahi sandwich for sure! We hope to see the octopus and turtles for sure! Thanks for your help!
Mim's is a local favorite - we just don't advertise it too muc to keep its ambience.

Is it a half of a slice of lime or a half of a lime??
A lime garnish is a small slice of lime - maybe 1/8th of the whole lime. It does add some very distinctive flavor to the drink, and, if your blender isn't powerful, noticeable pieces of lime. You can get away without it, but it doesn't have the same punch.
