We will be traveling to St. Thomas and would like referrals for restaurants that can cater well to gluten free diners(food prepared free from/contamination of wheat, malt, barley, rye and oats).
Your best bet is to decide where you'd like to eat and then call the restaurant in advance to see what they can offer. Most are very accommodating.
I think the sushi/ Asian restaurants might be your easiest option. There's a nice one across from Marina Market in Red Hook. I was just looking at cassava bread the other day, and gluten free was one of the features listed on its packaging. Most of the vegetarian places offer gluten free, I think, but none of them are really restaurants - more like take out.
