Can someone help me? I have "adopted" a US soldier serving in Iraq, who is from the Virgin Islands. (I'm sending her care packages). She said she would like me to bake and send her cookies made with berries. I wasn't sure if this is an island thing or not, but I've never heard of such a thing. Does anyone know exactly how to make these "berry cookies"? If so, any help would be appreciated! She's putting her life on the line for us, the least I could do is send her the cookies she likes the most!

Hello Candy,

I am not familiar with berry cookies. We don't have much in the line of berries, at least that I can think of. Perhaps she likes strawberries or raspberries etc. We have guavaberries, gooseberries; both somewhat difficult to come by on the island. Gooseberries are very tart, popularly stewed into a desert. Guavaberry is used for different things, most popularly guavaberry rum. There is sweetlime (they are a berry), not sure of any deserts made with them. Sorry I couldn't be more help.

Coconut Cookies or Cake is good, if she ever mentioned liking coconut.

2 cups sugar
1/2 cup water
1 1/4 cups coconut

Recipe:

Mix together all the ingredients in a heavy aluminum pot. Cook slowly, stirring occasionally to avoid sticking, until the mixture forms a soft ball when dropped in room temperature water. Remove the mixture from the heat and beat for a while. Drop the mixture by the spoonful on a cookie sheet lined with wax paper. Let the mixture cool on the cookie sheet to form sugar cakes.

Tips: 1/2 teaspoon vanilla essence can be added and a few drops of food coloring to vary the appearance of the cakes.

Other Ideas...
Depending on where you live in the states you might be able to get preserves, jams, dried fruit - of fruits we have here in the VI that she might like; tamarind, papaya, mango, guava, passionfruit, coconut...
