Can you recommend somewhere (preferably on St. John) where I can request a chef's table for dinner for 4-6 people.... looking for a nice dinner that takes advantage of the local food sources (fish) as well as other caribbean flavours. I found a place on St. Thomas but it was an italian resto...

Hard to find Chef's Table service on St. John. On St. Croix, Tutu Bene has it, and I know that the Wyndham Sugar Bay on St. Thomas offered it with some of their romance packages some time ago.
At the finer restaurants on St. John, like Asolare and Equator, you can probably ask.

Chef Mathayam (private chef) is very good and can cook and or cater pretty much anywhere. I think he is one if the better chefs on island.

Otherwise, I am the chef at Chloe and Bernards and I might be able to set something special up with you but I do not have a chef's table. I can do tasting menus. 😉
I hear that the chef (Ric) & staff at the Beach House Restaurant at Bolongo Bay do a beautiful & yummy chef's table/tasting menu.
