Not sure if your experience is in Italian dishes, Sushi, deli favorites or pastries but I have some suggestions. It is a pretty transient working population in the restaurant business on these islands and you probably would not have a hard time landing a Chef job at any number of places. . . IF you were already here. I would suggest opening a phone book and simply asking if they are hiring at restaurants where you could specialize, then come on vacation and check it all out, interview, etc. Or else just make the plunge and believe in your abilities and the prospects of a job.

However, if you want to secure a job before you move, you may want to go thru the Yellow Pages at www.viphonebook.com and call around to find a place that needs a chef. Also, you may want to keep an eye on the Island Trader at www.virginislandsdailynews.com and click on the link on the left side, about halfway down for the Trader. It comes out every Thursday.
