hello all...

the first time i ever visited STJ (about 7 yrs ago) i tasted possibly one of the most delicious cakes ever made! i had a look out for something similar this time around and didn't see anyting that sounded or looked at all like it (however i didn't really find myself in too many deli's so i could have tried harder, i know 😛 )

to the best of my memory it was round shaped and had a hole in the middle...the ring was sponge but the main flavour/ingredient was guava....does anyone know the name of this cake and even better-does anyone out there have a recipe for it??

You can buy a bundt cake pan pretty much anywhere, which is what you need to make that round cake with the hole in the middle. Just make a basic sponge cake mix (or buy a simple mix) add guava (you can buy it tinned) and bake. For a special treat, once it's baked, drizzle the cake with guavaberry liqueur and serve with lots of whipped cream or ice cream or both. Cheers!

storm: You should check the Relocation board. While they have recently come into the 20th century by accepting credit cards, I don't know if Motor Vehicles has made the leap to e-mail! 😉

shoulder2shoulder, Plaza Extra on St Thomas has guava muffins that I buy all the time. It's made with a yellow cake base, and has guava paste (kind of like the consistency of a fruit roll) baked throughout it. They're definitely addictive! The muffins are sweet enough to be cakes, and they might actually have a cake version, but muffins are neater and more portable. Plaza Extra definitely has the best muffins on the island, and has interesting flavors like pina colada, coconut, guava, and of course banana and probably blueberry. And they're cheap - the guavas are 4 for $3.99 I think, but the pina colada is 50 cents more for 4 HUGE muffins.

thank you all! STT Resident you had me totally lost with 'bundt cake' (what the? lol) until you said normal spongemixture! that i can do.....i just hope i can find tinned guava at the local supermarket....sounds a bit too exotic to be in their stock tho! i'm sure the afro-caribbean shop in town has some tho....

ms411-guava muffins....my mouth is watering! gonna have to give that a shot too!

shoulder2shoulder: do a google on "bundt cake" and you'll find a bunch of tantalizing recipes using this particular cake pan - guava might even be there but the recipes are easily adaptable to that. Hopefully you'll easily find the tinned guava in your area - happy baking!

shoulder2shoulder, guava is usually packaged as "guava paste." You can also get guava nectar and sometimes frozen guava drink concentrate, especially if you live in an area that caters to tropical populations. You can make scrumptious curds using the frozen concentrates!

thanks for the tip karen....i live near a small town on the "sunny" south east coast of ireland so no real catering to tropical populations! BUT there's plenty of places in the city that do...gonna have to make the journey in 🙁
altho it'll be SO worth it if i find what 'm looking for to get my bake on 🙂

shoulder2shoulder: Didn't realize you were in bloody Ireland, poor soul! Before you take any sort of offence, this commet comes from a transplanted English woman who has been on STT for over two decades, was on US mainland for 17 years before that and remains very careful about spouting perceived ethnic insults. That said, I still miss GOOD LUVERLY FRESH POTATOES!

isn't the 'interweb' marvellous! lol...guava paste from amazon,my life is complete 🙂 thanks for the recipe and the detective work, i've no excuse not to break out the mixing bowl now!!
