My wife and I love to hike. We want to take a nice long hike with the most interesting sites and great vistas and end up on a deserted beach -- with mid-morning picnic in hand. We'll be there from 6/26-7/1. Any MUST sees for this type of morning excursion? We'd like to start at around 7am and be done around noon. We're staying on the east side of the island 15 minutes past Coral Bay on Haulover Bay, but can travel anywhere with our rental car. We have the "off the beaten track" book, but were just wondering if we could get some recommendations here..... Two or three recommendations would be great...maybe we'll do two days of this!

This is a no brainer - the Reef Bay Trail.
You hike DOWN, visiting petroglyphs in a reflecting pool, just off the main trail, visit the ruins of a sugar mill, and end up on a deserted beach.
Good idea to have a boat pick you up, unless, if serious hikers as you noted, you can hike back up to the road.
Probably our favorite hike is the Johnny Horn trail. Runs between Waterlemon Bay and Coral Bay, with a cutoff down to Brown Bay ( your deserted beach ). Good views, some steep stretches, varied terrain. Definitely a hike rather than a walk. And not many people---we've hiked this twice and on one trip saw 2 other people. Trail comes down into ( or goes out of ) Coral Bay by the Moravian Church.

You can drive to Lameshur Beach and then hike the Lameshur trail that leads to the Reef Bay trail, continue on the Reef Bay trail down to the ruins on the Reef Bay beach and then back up to the Petroglyphs and then back to Lameshur for cooling off and some snorkeling.
You might visit Salt Pond Bay and do Ram Head trail. The Cinnamon Bay trail is also nice. Another nice hike is starting in Cruz Bay to Salomon then Honeymoon then Caneel Bay - you get three great beaches on that hike!
